Slow soaking: cover chickpeas with cold water and leave for 8-12 hours, try adding a teaspoon of Bicarbonate of Soda to the water to speed things up.
Quick soaking: cover chickpeas with cold water in a saucepan, bring to boil and boil for 1 minute. Turn off the head and leave to soak for 1 hour.
Cooking (stove): drain soaked chickpeas and pour into a saucepan, cover with 2 times the amount of cold water, bring to the boil, then simmer for 45 minutes - 1 hour.
